So Very Comforting

Although our trees are only starting to turn yellow, in a few short weeks, this picture will be a very accurate autumn view.

The days are still very pleasant — warm and sun-kissed with gentle breezes blowing through our now open windows. The air conditioning is most likely turned off for the year, and soon it will be time for evenings cuddled around the fireplace.

I would say that we have come down with our first colds of the season, however, autumn is still a week away — so this must be the one and only cold of summer.

There is something about having a cold that inspires me to cuddle up with a soft, warm blanket and look through my favorite comfort foods or recipes that I am sure would fall (I love a good pun) into that category. Mexican food, casseroles, Italian fare, and of course, something smooth and creamy for those tender sore throats — a nice chocolate cheesecake perhaps?

Sounds good to me!

 I’ve compiled a few of my favorites (and soon-to-be favorites) for you to peruse with me …

Let’s start off with a creamy, delicious Roasted Pepper Guacamole found at CulinaryMosaic.com –looks fabulous, doesn’t it?

Homemade guacamole is one of my all-time favorites!

Next, let’s dive right into a flavorful and aromatic dish such as Chorizo & Thyme’s  Mexican Bean Soup, a light pasta with Creamy Zucchini Sauce from Emmi’s Cookin’ or a warm bowl of Minestrone Soup with Pasta, Beans and Vegetables from Books and Lavender.

I’m feeling so much better already! But wait, there’s more!

How about a hearty main dish such as Potato Gnocci from Marisa’s Italian Kitchen or Sue’s Mexican Chicken from Sadie’s Nest?

Yes, please! So very yummy!

Now for dessert. But seriously, how do I pick only one dessert? There are so many out there that catch my eye! But this recipe has been on my “must-try” list, and, I’m so excited to make this when I’m feeling better! Better yet, maybe someone (cough-coughJonathan) will make it for me — then I would feel much better right away!

Thankfully, you don’t have to have a cold to enjoy these delicious comfort foods! But if you have to deal with a cold, wouldn’t this make it a little more bearable? I think so, and it’s definitely worth a try!
