Chocolate Almond-Coconut Smoothie

A little over a week ago, we found out that our youngest daughter is allergic to peanuts as well as a few other foods. The allergies are in the moderate-low range, however the nurse said to keep an eye on the peanut allergy as itΒ could become worse.

I’ll have to say, our little girl was pretty disappointed to learn she was allergic to one of her very favorite foods — tomatoes not so much, but peanut butter!

She loves peanut butter!

I tried to encourage her with all the foods she is not allergic to and mentioned that almond butter is pretty amazing! She was delighted, and I think she is going to be very pleased with this new smoothie — although I’m going to have to replace the banana in hers. Another allergy!

I hope you will enjoy this new recipe as well!

Chocolate Almond-Coconut Smoothie

*I prefer to use all organic ingredients

1 cup vanilla almond milk

2/3-3/4 cup ice

1 banana, in pieces

1/2 cup raw oats

2-3 Tablespoons almond butter

2 Tablespoons cocoa powder

2-3 Tablespoons shaved coconut

In a blender, combine all ingredients and pulse until mixture begins to combine.

-Mix on medium-high for approximately 45 seconds or until smooth.

-Garnish with additional coconut and a few chocolate shavings, if desired.

-Serves one, but can easily be doubled.

A rich and creamy smoothie that is perfect for breakfast, a snack or even dessert!

  1. Ooh this looks lovely! My sister has just discovered that my niece is intolerant to lactose and some fruits. I must admit I am struggling to think of different meals to give her. (I look after her 3 days a week so I need to think)! πŸ™‚ This looks yummy Anna! πŸ™‚

    1. Thanks so much, Claire! πŸ™‚ Yes, I know exactly what you mean — I am trying to come up with some “new” favorites for our youngest. We were very surprised she was allergic to such a variety of foods — wheat, banana, tomato, peanut butter and egg whites. We also found out that she (along with Jonathan and Aviah) is also allergic to our cat. :/

    I have had many challenges with my adult kids’ allergy, when they were kids. You can try to use hazelnuts too. My daughter just reminded me, that she remembered the homemade nutella, as I created.
    Walnuts is also a good alternative and possible to create delicious food with.

  4. My neighbor boys are allergic to peanuts too. The older one is growing out of it with sensitivity program. I’m always conscious of what he can have when I make goodies for them. This smoothie looks yummy! Can she have almonds? They are allergic to nuts.

    1. Thank you, Julie! Geneva is also allergic to banana, wheat, tomatoes and egg whites. Aviah had various food allergies when she was about 5-6, but outgrew them, thankfully. Hopefully Geneva will also. Yes, she can have almonds, so I bought some for her to try out. πŸ˜‰ She’s fine with other kinds of nuts, so were very thankful about that. She absolutely loves pecans! We felt so sorry for her when she found out she is also allergic to our cat, Marcie. πŸ™ They have always been best buddies! It was so sad hearing her talk to Marcie — she was trying to gently tell her that she was allergic to her. πŸ™

      1. Poor Geneva. My heart breaks for her and Marcie. I’m allergic to beef and tomatoes, but not dangerously so still down them and take meds this time of year.
